There are many special DIY HVAC parts houses online. I am guessing by the age of the furnace that it is oil. You may have a very hard time finding an oem part for this furnace. However there are lots of aftermarket parts that may exertion. I am a little surprised that a furnace from 1957 only has a bad thermocouple. Here are some links to get your started.

You will sine qua non to have the model number and serial number off of the placard inside the burner compartment. It should be just middle the cover to the upper right or lower right. You will need these because I am sure that the williams co made more then one size of furnace in that year.

Manually connecting the terminals at the thermostat does not expropriate, but manually connecting the terminals at the furnace fires it up. However, if I lower the temperature at the thermostat, that does lock out the burners down so...doesn't that mean the thermostat is working? - Any idea what I can do to fix it?
You have a millivolt system.
Its not generating enough voltage to act through the thermostat because of the voltage drop at that distance.
So yes your thermostat is working, I would look at the pilot to see if it has a good boyfriend impinging on the thermopile (like a thermocouple but bigger).
This is where the voltage is generated to operate your system.
If everything is OK there you may need a new thermopile.
Most safe hardware stores will have them.
Also any loose connections in the wiring can cause this as it's operated by such a low voltage.
