Why do sensible gas water heaters, furnaces, fireplaces have to be vented and a natural gas stove doesn’t? They are on for several hours at a time just like the other appliances I mentioned.

Mostly because heaters, furnaces and fireplaces run more hours and are much larger burners than a kitchen stove is. You probably run your stove for what? 2 hours a day tops? It is only wee 10,000btu burners for the stovetop and a 15-25,000btu for the oven. That's pretty small. Yes there are products of combustion from that, but not a lot.
A furnace on the other present to will run 8 hours or more out of a day in heating season. It is more on the tune of 70,000 btu's or more. A lot more nasty gases coming from that, that you don't lack to be breathing!
Any home with any fuel burning appliance or attached garage, should have a carbon monoxide detector on each disconcert.
